Dessert - mmmmm. Doesn't that sound great? I love desserts. Before I started keeping my budget I would just go to the store, wander up and down the frozen or bakery aisles and buy whatever looked good. Expensive right? Since I've cut my budget back those were defiantly one of the things to go first. Now I try and make them from scratch as much as possible because it's more cost efficient.
Today's tip would be this:
There are many recipes that use things from our cabinets. Things we just don't think about. Dig thru your cabinets and take inventory so you know what you have to work with!
Here's what I found in mine: pie crust and jello pudding. I was able to take a pie crust, jello pudding, a couple cups of milk and three eggs and turn it into this:
A beautiful chocolate meringue pie. My grandmother and mother made this when I was a little girl. I still love pulling off the peaks of the meringue.
Here's the recipe I used:
1 large box chocolate Jello pudding, "Cook and Serve"
3/4 c. sugar
3 egg yolks (save whites for meringue)
2 1/2 c. milk
Mix Jello pudding, sugar, egg yolks, and 1/2 cup milk in small bowl. Pour in pan with the remaining milk. Cook stirring constantly until it thickens. Pour into 10 inch pie shell.
Beat 3 eggs whites and 1/2 teaspoon of cream of tarter until it reaches soft peaks.
Slowly add in 1/2 cup of sugar - beat for another 2 minutes or so.
Cover pie with beaten egg whites and cook on 350 degrees for 20 minutes untill brown, but don't burn the top! Just toast it :)

Fabulous tip Carlie. I love digging through my cabinet and seeing what I can create from what I have on hand, especially desserts, which are my #1 weakness.

Yummy! You know, I bet you'd love a site called Supercook.com. You enter what you have on hand, and it gives you back recipes! It's a great way to use up and make do!

Yummmm. I love chocolate pudding, but my dh doesn't. But I love it when you find odds & ends and come up with something totally yummy. :)

that looks yummy!!! I talked about desserts today too! I have recipes up for no bake desserts. Looking at my recipes I would say that they are "from the cabinet/pantry desserts" at my house. :)
