Menu Planning Monday!

All right - crazy week because of camp everyday, but I am determined to eat at home every night!! my cabinets are stocked full and we are mainly eating out of them. I'm very happy because including the $30.00 I'll need to spend for Sunday I'll only need to put out around $40.00 total!! Yeah!

If you've been to my blog before you know that because of my shopping days I plan Fri - Thur.

Friday - Ham and Cheese Omelets, French Toast and Bacon

Saturday - Shake and bake Chicken nuggets, Potato's Au Grautin and peas

Sunday - Crawfish Boil baby!!! Corn, Potatoes, Mushrooms and a veggie tray

Monday - Chili with a veggie tray (I didn't cook it last week so it's a roll over)

Tuesday - Shrimp Fried Rice

Wednesday - Blackened Chicken Pasta (recipe below)

Thursday - Meat and potatoes over Rice with corn


Blackend Chicken Pasta recipe

1 lb of Boneless Skinless Chicken Breast
1 jar of Paul Prudomme's Blackened Steak Seasoning Mix
2 Jars of Ragu Classic Alfredo
1 16 oz box of linguinie noodles


I pan fry the chicken with some Paul Prudomme's Blackening Steak Magic (in my black iron skillet of course), cut the chicken in slices and mix it together with linguine and 2 jars of Ragu Classic Alfredo - throw in some more Steak magic to taste.

I know - ya'll thought it was going to be hard huh? Sorry!! This recipe feeds about 8 people. You can easily cut it in half if you'd like.
